Preheat oven to 325 degrees F / 163 degrees C.
Mix 1 Egg white and 2 tbsp Maple syrup in large bowl, then whisk until frothy.
Add 2 cups Pecans, 1/2 cup raw almonds, and 1/2 cup walnut halves to bowl and toss until evenly coated.
Combine 1/2 tbsp cardamom, 1/2 tsp nutmeg, 1 1/2 tsp cinnamon, 1/2 cayenne pepper, 1 tsp salt, and 1/2 cup erythriol in another bowl.
Add spice mixture to nuts and stir until fully coated with spices.
Spread nuts on prepared baking sheet covered with parchment paper.
Bake for 20 minutes or until nuts are lightly golden.
Remove roasted nuts from oven and let cool completely before serving.
